Coastal Sun Mills is a boutique, family-owned business located in beautiful Cardiff-by-the-Sea, California. We specialize in stone-ground organic flours and grains, milled in small batches with care and intention. Every order is freshly milled just before packaging, so what arrives at your door is as vibrant, flavorful, and nutritious as possible.

We believe great cooking starts at the source. That’s why we use only certified organic grains and traditional stone-milling methods that preserve the integrity of the grain—nothing added, nothing removed.

Why fresh-milled?

Fresh-milled flour is alive in a way commercial store-bought flour simply isn’t.

Most commercial flours are heavily processed. During industrial milling, the grain is stripped of its bran and germ; the parts of the wheat berry that contain the majority of its fiber, natural oils, flavor, and nutrients. What remains is primarily the starchy endosperm.

To create a consistent white product, many flours are then bleached using chemical agents or treated to speed up oxidation. After processing removes naturally occurring nutrients, the flour is "enriched" to replace some of what was lost.

Enriched flours typically have synthetic forms of nutrients added back. While enrichment restores a portion of these nutrients, it does not replace everything that was removed, nor does it restore the natural balance of the whole grain.

Fresh-milled flour is different

At Coastal Sun Mills, we mill the entire grain berry; bran, germ, and endosperm, just before packaging. This keeps the grain intact, preserving its natural oils, fiber, flavor, and nutrients in the form nature intended. Nothing is stripped away, bleached, or artificially added back.

The result is flour that is more aromatic, more flavorful, and more expressive in baking—whether you’re making bread, pasta, pastries, or everyday staples.
